In Salento, in the countryside of Salve, Salento Agency sells two ancient and typical buildings immersed in land characterised by olive trees, prickly pears, Mediterranean scrub and wild pear trees.

The ancient complex consists of a large pajara, a second smaller pajara, an ancient oven and an open kitchen enclosed by three dry-stone walls. It is possible to request authorisation from the relevant authorities for conservation and to create shaded areas.

This beautiful property is located close to the Masseria di Santu Lasi, recently declared a 'particularly important cultural asset'. The name originates from the martyrdom of San Biagio. Precisely on the occasion of the feast of San Biagio, celebrated on 03 February, it is possible to visit this enchanting masseria. Built in the early 16th century and enlarged over the following centuries, it has recently been restored to its former glory by its current owner.

The area around the masseria is characterised by numerous pajare, used in past centuries as a straw store or shelter. The characteristic feature of the pajare is their construction method. They were built with stones from their own land, without the use of adhesives but simply using the interlocking system. The main purpose was to clear the ground of stones to make it more cultivable. Usually the thickness of the walls reaches one metre; this makes pajare cool places even in the summer months.

Many companies nowadays specialise in the conservative recovery and enhancement of these magnificent 'monuments' of Salento's history and culture.
